I had a ball Saturday morning making a big batch of these waffles! Gluten free and quite yummy, they are baby Jax approved. For a little guy, he did a fantastic job of munching down several of these!
We should thank the Paleo Parents for this recipe and I encourage you to make a batch of your own, they freeze well and you’ll have them on hand in a pinch!
1 Medium apple
1 Cup of smooth almond butter
1 Tablespoon arrowroot starch flour
1 Tablespoon of vanilla extract
1/2 Teaspoon of baking soda
Oil for your waffle iron
I’m going to make it easy on you.
Add the apple and banana to your food processor and mix until fairly smooth. You may have to scrape down but get it to a pretty good paste
Add the almond butter, thoroughly combine
Add the eggs, blend
Add the remaining ingredients until mixed well
Make sure your waffle iron is good and hot
Pour a small dose of batter into the iron. We are making small waffles, not the gigantic ones you get at the Waffle House!
I timed for about 2 minutes until they were very golden brown.
Plate and serve with butter….and maybe a lil syrup or honey!
