Easy Time Tortillas!

I haven’t had a flour tortilla in 3 years or so.  Imagine my glee when I came across this recipe!  I LOVE social media, I love the internet, we are privy to so much information!

Full disclosure though, this recipe is GRAIN free, not CARB free.

Cassava flour is not easy to find, you’ll probably have to order it and it will be a bit spendy.  Please do not try to substitute any other starch flours, it just doesn’t work.

You will be talking about this recipe for years to come!

Take your time and actually put some fixings in these tortillas (I gobbled them down with just a slap of butter, my bad).  The recipe is super easy and in just a couple of minutes you will have a vessel of pure delight.  Enjoy!

I would like to acknowledge our friends over at Fork & Beans for this recipe! They are at http://www.ForkandBeans.com, check them out!

Grain Free Tortillas

* 3/4 cup of Cassava Flour (strictly no substitutions)

* 1/4 teaspoon salt

* 2 tablespoons of olive oil, or avocado oil, or even some nice leaf lard if you have it

* 1/3 cup of warm water

In a bowl combine Cassava flour and salt

Mix in water and then your oil

The dough should not be too sticky or too dry

Combine and form a ball

Divide in half, then divide the halves in half- continue until you have 6 balls.  They won’t be huge so make additional batches if you need.

Place one ball between 2 sheets of parchment paper.  If you don’t have parchment paper, go to the Dollar Store and get some.  They WILL stick, so parchment is very necessary.

With your rolling pin, give a press, turn the sheet half and give a roll.  Continue to roll out your tortilla until it’s very thin.

Your griddle should be good and hot, so just like any other tortilla, gently slide it into your pan.  Get it to bubble and flip.

Place the cooked tortilla on a plate with a towel over them so they don’t dry out.

That’s all there is to it.  Would love to see some creations from you guys, so hopefully you will post some pics!
