The holiday season is the time of year where you just might want to keep things simple. I know personally when the ingredient list starts to get a bit long my attention span gets short.
This recipe is quick, easy and really delicious. You can serve it with sliced vegetables or your own low carb high fiber crackers!
Artichoke Parmesan Dip

1 can (about 13 ounces) artichoke hearts (not the pickled variety)
1 cup of mayonnaise
1 cup of grated Parmesan cheese
1 clove of crushed chopped garlic, or 1 tsp of jarred garlic
Preheat your oven to 325 degrees
Drain and chop chop chop the artichokes
Combine all of your ingredients
Put the mixture into a oven proof dish (I love my clay baker), dust with paprika and bake for 45 minutes.
