To know me is to know how much I love my Brazilian Cheese Rolls. I can seriously gobble down a half dozen in a pinch. However, in the back of my mind I know I’m trading these cheesy delights for carbs.
Tapioca starch is the “flour” used in Brazilian Cheese Rolls and we all know that tapioca starch can drive insulin levels way too high. The occasional cheese roll isn’t a big criminal, but if you start having them too often, it can lead to trouble.
I came to terms with my lil cheese roll addiction over the holidays and went searching for a substitute that would free me from the carb consumption.
I win! I found a recipe for a roll that uses cheese and almond flour! YAY! I am really excited for you to try it. I have eaten this roll with butter, with my French stew, with spinach dip and I picture eating this roll with Keto gravy- you can find that on my blog!! YUM! This roll is going to have a bread like finish unlike the cheese roll which can be a bit more chewy.
I invite you to break out your food processor and try these. There will be no regrets, ….promise!
Remember, I use a Vita Mix and ALWAYS start with the wet ingredients first and I highly recommend it. There are no clumps, just smoothe batter!
I give credit to Karen Baird, her book-Ketogenic Diet: 35 Quick & Easy Recipes For Proven Weight Loss (I left out thyme, but feel free to add herbs if you like)
Oven: 400 degrees Mini Muffin Pan: grease
1 Cup sour cream
2 Tablespoon of melted butter
Put these ingredients in your blender, food processor or Vita Mix
Blend until smooth
Add 1 cup of shredded cheddar cheese
Add 1/2 cup of colby, or even parm if you feel frisky 🙂
Blend until smooth
Add 2 cups of almond flour
Add 1/2 teaspoon baking soda
Add 1/4 salt
(add thyme now if you like)
Pour into your prepared pan and bake for 14 minutes. Be careful not to over do it, or under cook. You may want to check on them half way through. Be a good judge!
