My blog is viewed by folks all over the world, and when I find a bulletproof recipe, regardless of who developed it, I am going to tell you about it! Simone Miller is the author of The Zenbelly Cookbook and there are some real gems in it. Some of you may not have the book or access to the book, so I’m here to share.
After numerous loaves at the specified heat and time, this bread delivers perfectly every time.
The ingredient list isn’t mind bending or so exclusive that you can’t find the stuff at your local market. I love that. I love this bread. It is gluten free, no added sugar and nutrient dense. I invite you to whip up a loaf and let me know your thoughts.
Zenbelly Loaded Banana Bread by Simone Miller
1½ cups mashed very ripe bananas (about 3 bananas)
3 large eggs
¼ cup palm shortening or softened unsalted butter, plus more to grease the pan
1 tablespoon vanilla extract
1¼ cups almond flour
½ cup arrowroot powder
2 tablespoons coconut flour
1 teaspoon baking soda
¼ teaspoon finely ground sea salt
½ cup finely shredded unsweetened coconut
½ cup chopped raw pecans
¼ cup cacao nibs or mini dark chocolate chips
½ cup dried cherries or cranberries
01 Preheat the oven to 350°F. Grease a 7-inch loaf pan.
02 Combine the bananas, eggs, shortening, and vanilla in the bowl of a food processor or high-speed blender. Blend until well combined, about 20 seconds.
03 In a large bowl, combine the almond flour, arrowroot, coconut flour, baking soda, and salt.
04 Pour in the wet ingredients and stir to combine.
05 Stir in the coconut, pecans, cacao nibs, and cherries.
06 Pour into the prepared pan and bake for 50 to 55 minutes, or until a toothpick inserted into the middle comes out clean.
07 Allow to cool before removing from the pan.
