Keto Pancakes!


It’s Sunday, the perfect day to lounge around and make something special for breakfast. Being in the mood for something “bread like” I came across a nifty lil recipe for Keto pancakes.  The recipe list is short, which I love and takes just minutes to whip up!  I’m not a big syrup fan, and especially now that I’ve sworn off the carb monster.  Instead I filled mine with a dollop of cream cheese!  Delightful!
This recipe comes courtesy of Wicked Stuff,  I’ve subscribed to the newsletter so I am counting on some wickedly good Keto recipes!
Keto Pancakes Recipe (with cream cheese)
  1. 2 oz cream cheese
  2. 2 eggs
  3. ½ tsp cinnamon
  4. 1 tbsp coconut flour
  5. 1/2 to 1 packet of Stevia in the Raw (or whatever Stevia you like)
  1. Blend or beat together all of the ingredients until smooth.
  2. You’ll make two pancakes, so heat up a non-stick pan or skillet with butter or coconut oil on medium-high.
  3. Make them just like you would normal pancakes. Try to cook it most of the way on one side and then flip!
  4. Top with butter and/or a sugar-free maple syrup (check your labels, they aren’t all created equal!)
