Keto Pancakes!

It’s Sunday, the perfect day to lounge around and make something special for breakfast. Being in the mood for something “bread like” I came across a nifty lil recipe for Keto pancakes.  The recipe list is short, which I love and takes just minutes to whip up!  I’m not a big syrup fan, and especially now that I’ve sworn off the carb monster.  Instead I filled mine with a dollop of cream cheese!  Delightful!
This recipe comes courtesy of Wicked Stuff, http://www.wickedstuff.com.  I’ve subscribed to the newsletter so I am counting on some wickedly good Keto recipes!

Keto Pancakes Recipe (with cream cheese)
Ingredients
  1. 2 oz cream cheese
  2. 2 eggs
  3. ½ tsp cinnamon
  4. 1 tbsp coconut flour
  5. 1/2 to 1 packet of Stevia in the Raw (or whatever Stevia you like)
Instructions
  1. Blend or beat together all of the ingredients until smooth.
  2. You’ll make two pancakes, so heat up a non-stick pan or skillet with butter or coconut oil on medium-high.
  3. Make them just like you would normal pancakes. Try to cook it most of the way on one side and then flip!
  4. Top with butter and/or a sugar-free maple syrup (check your labels, they aren’t all created equal!)

Okay, there it is!  I hope you find some time to play with this and figure out what makes you do the Pancake Dance!  Good for you and good for your body!

Happy Sunday!

Cheers,

Rhonda
