Also Known As “Soul Bread”
I’ll admit, I was a skeptic. Several comments about this bread were not at all flattering. Using whey also can be cost prohibitive, so again I wasn’t too fired up! But being the info junkie that I am, I had to… “go there”.
Ummmm, a girl can change her mind right? Hey why not, zero sugar, 1.8 g of carb per serving-1 slice out of 16 slices.
While this loaf of “bread” turned out beautiful and it’s taste is first rate, I am still on the fence about cost. The recipe calls for 1 2/3 cup of whey and the bag? It’s not huge (1lb at a cost of ($16.99). If you don’t mind buying the good whey, then go for it!
It’s keto friendly, it’s low carb and it’s tasty. This might give you the green light to make it on a regular basis. The whey I use was the recommended brand by the author. I cannot suggest that you substitute. Some things are good just as they are, and so is this recipe.

- 12 ozs cream cheese, softened
- 1/4 cup butter
- 4 eggs
- 2 drops liquid sucralose (or stevia), optional
- 1/4 c heavy whipping cream (or half and half)
- 1/4 cup olive oil
- 1 2/3 c unflavored isolate protein powder** (zero carb)
- 1/2 tsp salt
- 1/3 tsp baking soda
- 1 tsp xanthan gum
- 2 1/2 tsps baking powder
- 1/4 tsp cream of tartar
Preheat oven to 325 F. Prepare a bread pan (9″ x 5″) or molds.
Put cream cheese and butter in large microwave safe dish . Microwave for 1 minute.
Take out and blend well with stick blender (or hand mixer)
Add eggs, few drops of sweetener, heavy cream, and olive oil and blend real well.
Blend all dry ingredients in separate bowl.
Add dry ingredients to cream cheese mixture and stir well with spoon or spatula. Don’t use mixer or hand blender for this step because it will whip it too much.
Pour into a greased pan or silicone mold and bake at 325 F for 45 minutes, or until golden brown. The bread may be dry on top but adding melted butter helps if you’re eating it right away. Once cool, wrap in plastic to store.
Enjoy with butter AND olive oil, TOAST it! ENJOY!
