Keto White Sandwich Bread

Also Known As “Soul Bread”

I’ll admit, I was a skeptic.  Several comments about this bread were not at all flattering.  Using whey also can be cost prohibitive, so again I wasn’t too fired up!  But being the info junkie that I am, I had to… “go there”.

Ummmm, a girl can change her mind right?  Hey why not, zero sugar, 1.8 g of carb per serving-1 slice out of 16 slices.

While this loaf of “bread” turned out beautiful and it’s taste is first rate, I am still on the fence about cost.  The recipe calls for 1 2/3 cup of whey and the bag?  It’s not huge (1lb at a cost of ($16.99).  If you don’t mind buying the good whey, then go for it!

It’s keto friendly, it’s low carb and it’s tasty.  This might give you the green light to make it on a regular basis.  The whey I use was the recommended brand by the author.  I cannot suggest that you substitute.  Some things are good just as they are, and so is this recipe.

I want to thank Lisa at Low Carb Yum for this recipe.  Lisa did not profess to being the creator of the recipe and I have noticed a ton of variations.

More importantly, we are on a journey to better health and SHARING IS CARING!!  So enjoy my friends!

Again, thank you Low Carb Yum- It’s Declicious!

INGREDIENTS
  • 12 ozs cream cheese, softened
  • 1/4 cup butter
  • 4 eggs
  • 2 drops liquid sucralose (or stevia), optional
  • 1/4 c heavy whipping cream (or half and half)
  • 1/4 cup olive oil
  • 1 2/3 c unflavored isolate protein powder** (zero carb)
  • 1/2 tsp salt
  • 1/3 tsp baking soda
  • 1 tsp xanthan gum
  • 2 1/2 tsps baking powder
  • 1/4 tsp cream of tartar

INSTRUCTIONS

Preheat oven to 325 F. Prepare a bread pan (9″ x 5″) or molds.
Put cream cheese and butter in large microwave safe dish . Microwave for 1 minute.
Take out and blend well with stick blender (or hand mixer)
Add eggs, few drops of sweetener, heavy cream, and olive oil and blend real well.
Blend all dry ingredients in separate bowl.
Add dry ingredients to cream cheese mixture and stir well with spoon or spatula. Don’t use mixer or hand blender for this step because it will whip it too much.
Pour into a greased pan or silicone mold and bake at 325 F for 45 minutes, or until golden brown. The bread may be dry on top but adding melted butter helps if you’re eating it right away. Once cool, wrap in plastic to store.

Enjoy with butter AND olive oil, TOAST it!  ENJOY!

    • Hi Gloria, I never intended to portray this recipe from Low Carb Yum as the original. I’m simply sharing a recipe that works and hoping others will find it doable for their diet as well. The website doesn’t claim to be the originator either. Thank you for your contribution of Soul Bread and subsequently rocketing this recipe to the top!

  1. This probably has been asked before, but is the whey protein critical to this bread turning out? For some reason my granddaughter does not what whey protein powder so we have been purchasing vegan protein powders which taste pretty good! But maybe the bread would not rise as well – not sure if people tried other protein powders. Thanks!
