Keto Scalloped Zucchini Bake

I knew that planting all those zucchini this year was going set me up for zucchini hell, but I did it anyway.

If you too have bushels of zucchini sitting around, never fear, Rhonda is here.  I hate throwing away perfectly good home grown produce, so my goal this season is to figure out what to do with all this squash and pass the tips on to you.

You might be practicing Keto, and you might not, but I think the coming recipes will appeal to everyone.  Besides there is not one good reason I can think of that would prohibit you from eating your veges!

I hate to heat up the oven in the summer but sometimes you do not have a choice, serving cold cuts and salad can run it’s course.  This dish can be done in the morning and easily heated up for serving- I’ve been known to throw my zucchini lasagna in the microwave and ta-da!  You have a quick nutritious lunch!

This dish is very versatile so feel free to improvise (I was tempted to shave some nutmeg into it but will try it next time)!

Keto Scalloped Zucchini Casserole

Ingredients:

2 large fresh zucchini sliced on a mandolin at 1/4 inch, or simply slice it up

2 cloves of fresh chopped garlic

2 cups of Heavy whipping cream (yes, I said HWC!) Keep in mind that this can vary depending how big of a pan you use!

2 cups of Ricotta

1/2 cup grated cheese, your choice (I used up that left over cheese from Taco Tuesday) Great way to clean out the fridge of those little containers of randoms!

1/2 cup grated Parm

Salt and Pepper

Butter

Snipped chives (optional)

Chili pepper flakes (optional)

Method:

Pre-heat your oven to 350°F

Grease a 9 x 13 pan with the butter

Layer your zucchini in pan, perfection not needed

Thoroughly mix your HWC, ricotta and cheese in a bowl

Add your chopped garlic to the cream mixture

Pour the cream mixture all over the top of your zucchini

Top your pan with foil and slide into your hot oven

Bake for 35 minutes

Remove foil covering and top with 1/2 cup (or more) Parm

Bake for 10 more minutes

Your goal is to get a nice browing on top, so hit the broil button if you have to, just keep a good eye on it.

Remove from the oven and allow it to cool a bit before serving, it will be hot!

I’m serving this with sloppy joes and coleslaw tonight.  Again, I think it would be a great lunch option or a side to any meal.
